This terra cotta cooking vessel is the preferred tagine of the Middle Atlas mountains near Beni Mellal. The joke about unglazed tagines is that they hold so much of the flavor after each use that after a while you wouldn't need to add spices or seasoning anymore to your recipes. This tagine is totally unglazed.
When seasoning this tagine for first use, please be generous on the olive oil. This process makes an important difference in flavor and adds strength to your tagine. This tagine can be used on stove top (low heat) as well as in the oven (up to 350F).
