Moroccan raib is an artisanal home made Moroccan yagourt. It has been traditionally made in the country side as refrigeration was not available. All excess milk was turned into yagourt and cheese for the family to enjoy.

Moroccan Artichoke Thistle (Cynara cardunculus) aka cardoon aka desert artichoke aka wild artichoke, comes from the wild artichoke variety of the artichoke family. The thistle is used in milk to turn it into a delicious yagourt called "raib".
PREP:
For a quart of milk, take a pinch of thistle and enclose it within a sterile cotton ball. Dip it in the milk and them squeeze it out in the milk repeatedly for about 20 times. Add sugar and/or vanilla if desired and set aside for a 3-4 hours.
Regrigerate if desired cold.
