This terra cotta vessel is the preferred tagine in the souks of Marrakech! The joke about Ourika and Souss tagines is that they hold so much of the flavor after each use that after a while you wouldn't need to add anymore spices or seasoning to your recipes. This is one of Paula Wolfert's favorites. This tagine is not glazed.
When seasoning this tagine for first use, please be generous on the olive oil. This process mysteriously makes an important difference in flavor and adds strength to your tagine. This tagine can be used on stove top (low heat) as well as in the oven (up to 350F).
